Custom Sweetness 40 Degree Chef Knife Grind
30 to 40 Degree Included Angle Grind This "Hybrid" grind geometry is recommended for my modern knifes made with harder, wear resistant steels. Allows improved slicing and cutting as compaired to the traditional Western Chef Knife grind. Excellent grind for all applications and is fairly durable.
Custom Sweetness 50 Degree Chef Knife Grind
40 to 50 Degree Included Angle Grind Traditional Western Chef Knife grind useful when slicing and cutting heavy duty tasks such as disjointing meat and deboning. Not as sharp as the Hybrid grind but longer lasting edge.
